Balsamico is the widely used shorthand in German for Balsamessig (balsamic vinegar). It features prominently in modern German cooking for salad dressings, marinades, and reductions. Balsamico di Modena (IGP) is the protected Italian product; the German market also carries cheaper 'Balsamico-Creme' products.
