Kuvertüre is professional-quality chocolate with a high cocoa butter content (≥31 %), used in German patisseries for coating, moulding, and decorating. It melts and sets with a glossy finish that regular Schokolade cannot achieve. Used uncountably; plural Kuvertüren in product lists.
